Dalmatian Seafood Risotto: A Taste of the Adriatic at Home

At Story on the island of Vir, our Dalmatian Seafood Risotto is a fan favorite, blending fresh, local ingredients with the rich culinary tradition of the Adriatic coast. This dish is perfect for recreating a touch of our seaside paradise in your own kitchen.

Dalmatian Seafood Risotto – A Taste of the Adriatic Coast

Ingredients:

  • 200g Arborio rice
  • 500g mixed seafood (shrimp, squid, mussels)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 100ml white wine
  • 750ml fish stock
  • 2 tbsp olive oil
  • Fresh parsley, finely chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pan, sauté the onion and garlic until softened.
  2. Add the Arborio rice and stir to coat in the oil. Cook for 2-3 minutes until slightly translucent.
  3. Pour in the white wine and allow it to evaporate.
  4. Gradually add the fish stock, one ladle at a time, stirring constantly until absorbed.
  5. In a separate pan, cook the mixed seafood until tender. Add it to the risotto during the final minutes of cooking.
  6. Finish with parsley, lemon juice, and seasoning. Serve immediately for a warm, flavorful taste of the Adriatic.
